    Growing up in India, in the Spring/Summer season everyone in the family would look forward to the desert part of the meals. More often than not it was Mangoes in some form or the other. Me and my brother ate those Mangoes in the least civilized manner, as all our faces were smothered with Mango pulp! Not to forget the fight over the seed of the fruit! Who gets that one, as it was a bonus serving and we had to coin toss it out! We made milkshakes out of them, topped them on ice creams, made ice creams out of them, and everything imaginable! So given what this fruit means to me, I thought it was fitting to pay an homage to it, and I've decided to make various things where Mango plays a big role. And to start things off, I decided to dust off an oldie. I actually made this sandwich for my friends who I entertained for my birthday a few years ago.It was a simpler recipe back then, just some chicken topped with some Mango on a Ciabatta roll. But this new recipe takes it to a whole new level! With smoked Chorizo, Cumin and Chipotle blackened Chicken and fresh Mango topped with Chimichurri sauce, this is a savory tropical party in your mouth. It's smokey from the Chorizo, warm and spicy from the Chicken and sweet from the Mango, and tangy and refreshing from the Chimichurri. Checks all the flavor boxes!

    Step into any Indian restaurant and ask for a plate of samosas, and you'll often find them served with a small bowl of bright green chutney that leaves a fiery tingle on the tip of your tongue. The construction of this alarmingly vivid chutney is quite simple: Fresh herbs, fresh chiles, and a few spices are ground together with a bit of lime juice and water. It's much like a chimichurri, but with a more powerful punch. Green chutney is called that for a reason—it's vividly, almost alarmingly verdant in color—but frankly, I think the name does the chutney a disservice. It strips away the nuance and richness from this alluring condiment, which can be made in a thousand different ways. Some versions might contain coconut, while others star herbs like mint or employ unique combinations of spices to add flavor.Those samosa sidekicks aside, green chutney can be much more than a condiment on the edge of a plate. It is bursting with flavor and can take on many roles: toss roasted vegetables in it, or fold it into a bowl of chilled yogurt to make an herby raita. I like to stray even further away from its typical applications and use it to marinate chicken. Roast chicken, whole or separated into pieces, benefits brilliantly from chutney-based marinades. You make the chutney and reserve half as your dipping sauce, while the other half gets folded into creamy, tangy yogurt to make a flavorful marinade for the chicken. Use a serrano or a Thai chile when you want a good dose of heat in the chutney; a jalapeño will work to give you a milder burn. You can lower the spiciness further by stripping away the seeds and the rib at the center. (Or make it as hot as you like, and keep a stash of creamy yogurt on hand—a dollop or two will be just enough of a fire extinguisher for any guests who can't take the heat.)

    Skillet-grilled shrimp meets chimichurri, a delicious union requiring a little bit of prep (peeling and deveining shrimp as well as making the chimichurri) but only 3 minutes of cooking time. To butterfly shrimp, simply make an incision with a paring knife down each shrimp's back—you can, with a little practice, devein as you butterfly. Extra chimichurri can be served with grilled bread, as extra dipping sauce for the shrimp, or with any other grilled item you might be cooking: steak, chicken, vegetables. Don't make the chimichurri too far in advance—the acid from the lime or vinegar dulls the vibrant green color of the herbs.

    Authentic Colombian hot dogs are made with cheap, bland hot dogs that you can barely taste under all the toppings. Gilbert's Craft Sausages Aloha or Bourbon Apple chicken sausages will shine through the stuff on top. I've seen Colombian dogs topped with everything from raspberries to hard boiled eggs and ham. This version is actually pretty minimal, but feel free to go crazy and add your own twist.
