It was at the end of the 19th century, at the Savoy hotel in London, that a French chef, Auguste Escoffier, created a dessert based on peach, ice cream, vanilla syrup and raspberry coulis in honor of Australian opera singer Dame Nellie Melba.
    • Pavlova. Crispy and melting in the mouth, the Pavlova is a traditional Australian and New Zealand dessert dish that is a kind of gourmet meringue covered with whipped cream and slices of fresh fruit.
    • Chicken Parmigiana. As its name suggests, Chicken Parmigiana is quite simply chicken with melted parmesan, all topped with ham and Neapolitan sauce. It is usually served with fries, pasta or salad.

    Traditional Aussie dessert to which I was introduced while studying there. Australians are great people, and their food is superb to match. This one is mouth watering... mmmmmm

    Here is the story :) As an Aussie living "Up Over" (in the US) I asked help my 11 year old niece make Pavlova for her report on Australian Christmas Traditions & food. The report was handed in & then I got the urgent call from my Brother. As part of her report she was to make a "Pav" & serve it to her class. She had handed in her report with a traditional Pavlova recipe. It serves 6-8 people. Her class is comprised of 32 kids required to taste some Aussie "Chrissy" traditional tucker (food). If you have ever made a Pav, you know it takes a LOT of work. For an inexperienced 11 year old making the meringue base/crust, it's tough stuff & I was not up to the challenge helping her make five of them. Then possums (as Dame Edna would say), a stroke of brilliance struck me & we decided to try and fake it! To my surprise it worked! YEAH MATE! Tastes really close to the real deal. I've uploaded some pics to show the Mini Faux Pav we made to test the recipe out, & then the final result as made by my niece.

    This very traditional Australian bread was the staple food of the famous Australian swagman. Traditionally it is cooked in the coals of the campfire but this version is made in your oven. It's very quick to make and extremely versatile. Damper is a cross between a bread and a scone. It can be either sweet or savoury and the variations are endless - just use your imagination. Try a savoury damper as a side dish with soup. The swaggies often served a plain or sweet damper with butter and golden syrup (corn syrup). Served like this it's called 'cockie's joy' - a 'cockie' being a farm worker, and a 'boss cockie' being the person in charge. Damper does not keep well. It is best eaten the day it is made, but it can be frozen and reheated. Give it a try for something different!
