Aug 19, 2022 · Cilona shared with us that they eventually worked together at another restaurant in New York before they each went off to do their own thing. Cilona—who bought a house in Litchfield County years ago—eventually called his friend to run it back in the early 90s when they opened Brookside Bistro, and ultimately opening RSVP in 2001.

Sep 5, 2023 · —Charles Cilona (Mr. Cilona has lived just across the covered bridge on what is often referred to as the “west bank” of the Housatonic river in a house he bought in 1971. He and his partner Guy Birster own and operate the popular (and often noisy) restaurant RSVP in West Cornwall, now in its 23rd year.)
Jan 19, 2023 · RSVP is owned by longtime friends Charles Cilona and chef Guy Birster, who met when they both worked at a Pasadena restaurant 40 years ago and in New York much later. In 2001 they ended up in Litchfield County and decided to open RSVP, a multi-course tasting eatery that’s also BYOB.
