Creamy and rich in cheese, it is prepared with rice typical of northern areas, such as the Arborio, Carnaroli, and Vialone varieties, and cooked slowly in broth.     • Fiorentina Steak. A bistecca fiorentina, or Florentine T-bone steak, covers all of the characteristics of Italy’s best dishes: a specific cut of meat from a specific cow prepared in a very specific way all within the confines of a specific region.
    • L’Amatriciana. Pasta with Pork | Primo | Rome. Like any good rivalry, Rome is split between l’amatriciana and la carbonara. Both pasta dishes are delicious and it would be impossible to decide which one is actually better.
