But I don’t see how Bumi will outwit Ghazan with Earthbending if earth is just like providing more ammo to a Lavabender (as Bolin said). Whereas Ghazan is only ever shown to use earthbending one way - the offensive.

Bolin is the only lavabender whose background we know, & he obviously has mixed heritage. It's often speculated the same is true of Ghazan, but there's no real evidence of it. One possible motivator is that it keeps more of the Avatar Extras statement canon by positing that you need a mixing of elements to perform the technique.
