    An easy and old fashioned pickle that takes its name from the fact that this pickle goes so well with simple bread and butter, or sandwiches. This pickle must be stored in a DARK place, or the cucumbers will lose their colour, and it is best eaten after 2 months. I always try to have a jar or two of this colourful and tangy pickle tucked away in my pantry - as it makes fabulous sandwiches for teatime or picnics, as well as being an ideal accompaniment for simple suppers and light toasted snacks. This recipe is ideal when cucumbers are cheap or you have a glut in your garden.     ## Lettuce wraps: low-carb, keto, gluten-free and delicious. Lettuce wraps (or lettuce cups) have a lot going for them: Fresh, filling and easy to prepare, they’re a great party food and a perfect fit for many specialized diets. With some attention to the ingredients you put in, they are keto, low-carb, and gluten-free. For a weeknight meal, this dinner recipe is hard to beat. Leave out the hummus and they’re even paleo. ## A variation on Asian lettuce wraps These aren’t the P. F. Chang’s-style asian chicken lettuce wraps, with ground chicken, sesame oil, hoisin sauce and soy sauce (though, those are delicious). Instead, this recipe offers a creamy, crunchy variation on a BLT sandwich. This BLTA (bacon, lettuce, tomato, avocado) in easy chicken lettuce-wrap form is perfect for an easy dinner or a summer party appetizer, since it is served at room temperature. The mayo-hummus spread adds creamy texture, as well as holding everything together. ## Let’s talk about butter lettuce Butter lettuce works perfectly for this because butter lettuce leaves are thick and luscious (one might even call them buttery), as well as being the perfect size for a hand-held treat.     I use the slicing blade on my Cuisinart to make the slicing job fast and easy. I have monkeyed around with this recipe since the early 1980s, and about 10 years ago I settled on this combination of ingredients. I don't process them (I did once and I found the texture of the pickles suffered) but you certainly can if you wish. You can also store them in the fridge (if you have room) if you have safety concerns about not processing them; they'll be eaten pretty fast so won't be taking up a lot of room for long!

    There is something very meditative about eating a meal out of one big bowl. All of the colors and flavors mix together and create different bites each time you dig in. In this particular Japanese dish, “don” which literally translates to “bowl”, there are countless variations. The meat of this big ol’ bowl of food would be the mung bean. High in protein, fiber, and very easy to digest, mung beans have been used in Ayurvedic cooking and ancient Chinese medicine for centuries. There are a few steps of prep involved here, but this recipe will yield a few days worth of meals that you can add to and tweak depending on what you feel. Donburi would also be great for a dinner party. Set out all of the different components and have everyone create their own.

    This recipe is inspired by the Coliflor tacos served at Todd English's MXDC in Washington, DC. Their taco trio was the greatest lunch this summer intern could ask for--infinitely customizable so that I could hit multiple food groups in one short half hour. I would order these tacos when I wanted to lighten up my taco trio. This recipe borrows its pickled onions from Molly Yeh and its tzatziki from Ina Garten, and roasts the cauliflower to get even more flavor. If you like spice, feel free to spike your turmeric butter with some Aleppo pepper!

    My husband learned to make salad from his mother, so the family has been making salads this way for 50 years. We have this virtually every day. It takes a little practice, because the dressing is made "to taste". If you change type of oil or vinegar, you'll need to experiment a little learn how much to use. Our favorites are olive oil, and balsamic or rice wine vinegars. But other oils and vinegars work too. Parmesan from the can works (and it's what we use for everyday) but fresh grated is even better. Change vegetables to suit your tastes or what's in season. Play with it, and have fun - this is more of a technique than a recipe.
