Press and hold L2+R2 before the character selection screen appears and continue to hold those buttons as you make your selection. If you keep the buttons held throughout the process, you should hear a remix of "I Wanna Take You For a Ride" appear on the load screen.

You can unlock Galactus as a playable character by earning 30,000 points on your player card. Alternately, veterans of the series with a save file from Marvel vs. Capcom 3: Fate of Two Worlds will have Galactus automatically unlocked.
To initiate Galactus Mode, hold L1 + SELECT + X (or LEFT BUMPER + BACK + A on the Xbox) while highlighting 'Arcade Mode.'
