The highest end wines are produced in 51 different sites throughout Alsace with the noble varieties of Riesling, Gewürztraminer, Pinot Gris and Muscat. What makes these sites more special than others usually involves the vineyard’s southern exposure to receive the most sun (it’s a cool-climate region , so ripening is tricky) and soils.
Here are the levels: Kabinett: Wines that are dry with around 10% ABV or off-dry (partly sweet) with about 8.5% ABV. You’ll find a great deal of Mosel wines in this category. Many are great. Spätlese: “Late Harvest” Wines that range from dry to sweet using riper grapes. Wine will be dry with the words “Trocken” on the label.

Domaine de Montille Volnay 1er Cru 'En Champans' 2020. "En Champans" is one of the most highly regarded vineyards of Volnay. This steeply sloped terroir is very calcareous with a light brown soil and sits at the highest end of the parcel. Toward the bottom, the terroir is more clay-driven with earth that vascilates between brown and red.
