Then turn each of the bread slices over.   Slice both the Cabot Vermont Sharp Cheddar and Cabot Colby Jack Cheese very thin. Place the layers of Sharp Cheddar on 2 slices of bread. Follow with the artichoke hearts, fresh herbs, and Colby Jack Cheese as the third layer.   Cover each sandwich with the other 2 slices of bread and press on the sandwich with a bit of pressure.    Preheat grill pan on medium heat. Brush the bread with melted Cabot Salted Butter and place sandwiches on the grill pan.   Cover with the lid and cook on each side for 3-5 minutes, until cheese is melted.     Butternut Squash Quesadillas with Cheddar

    Love butternut squash? Big fan of quesadillas? Then you need this recipe in your arsenal! This fall-inspired dish beautifully combines roasted butternut squash and Cabot Lite50 Jalapeño Cheddar for a truly flavorful quesadilla. Top with a dollop of sour cream and they become even dreamier to devour. We know you’re ready to make these, so let’s preheat that oven to 400°F and get going! Peel butternut squash into ¾-inch cubes (should yield around 5 cups) and place the squash, unpeeled onion (cut into eighths), and unpeeled garlic clove on a shallow baking dish, arranging in a single layer. Drizzle with olive oil and toss to coat. Roast mixture in the oven for about 15 minutes. Remove garlic and continue to roast the squash and onion for another 15 minutes. Remove from oven and let cool a bit. Pull off the peels from the onion and garlic. Place the squash, peeled onion, and peeled garlic in a food processor, puree until smooth, and season with salt and pepper. Arrange 4 tortillas on work surface and spread each with ¼ of the squash puree. Top with bell pepper and grated Cabot Lite50 Jalapeño Cheddar and press remaining tortillas on top. Coat both sides lightly with cooking spray. Preheat a 7-inch nonstick skillet over medium-high heat and cook 1 quesadilla at a time until golden on both sides (about 3 minutes per quesadilla). Keep quesadillas warm by placing them on an oven-safe dish and putting it in turned-off oven. When ready to serve, cut each quesadilla into 6 to 8 wedges. If you like bigger slices, you can just make 4, as pictured. Top each slice with a dollop of sour cream, if desired (we strongly suggest you do!). In the mood for chicken quesadillas?     I got this Buffalo chicken dip recipe from a respiratory therapist at the hospital where I work. He brought it to a party and everyone asked for the recipe. I appreciate all the reviews that have been written about this recipe since I posted it so long ago. I see more and more that people are making it with freshly cooked chicken - great idea. I also like the idea of using rotisserie chicken. The original recipe used canned chicken for convenience, but I agree with all of you that the fresher meat tastes better. Barb P.S.     Spicy Thai Chicken and Sweet Potato Stew

    I started making this stew last winter, and fell in love instantly with its irresistible combination of spices and textures. The original recipe that I found was for a soup, and only called for chicken and sweet potatoes which was good, but after making it a few times, I decided that I wanted something a little bit heartier but still healthy. So, I added green peas and bulgur wheat, and the perfect winter stew was born. One thing that always amazes me about this recipe, is that although it does not cook for a long period of time, the combination of the spices, ginger and green pepper give the stew an incredibly deep and dynamic flavor that you can usually only find in slow-cooked dishes. As a side note, since first discovering this soup last winter, I traveled to Thailand for my honeymoon, which only made me love this soup even more, since I now appreciate how it truly reflects the flavors of authentic Thai food. I like to make a huge batch of this soup and either serve when we have guests over for dinner (it always gets rave reviews), or freeze it in smaller containers so that I can heat it up for a delicious and quick meal anytime I am craving it.

    After our recent trip to Alaska, I have a renewed interest in sourdough baking. I found this recipe at Alaska Travel Magazine.Com. DH loves cornbread and this is a great recipe. It is a little different than traditional cornbread with a mild sour flavor. I updated the cooking time after 16Paws review and my preparing the recipe again and watching the time closely. Be cautious when adding the milk due to differences in starter with regards to "wetness".

    I recently ordered Crawfish Cakes (like crab cakes) at a restaurant and just loved them. I looked here but couldn't find anything similar to them, so I modified a crab cake recipe of mine and it turned out fabulous. Use frozen crawfish chopped up, or substitute crab for the original recipe. I haven't tried it, but I also think this would work with chopped cooked shrimp. UPDATE: Following a review suggestion, I next time I tried this I added some green onion and chopped cilantro and it definitely was an improvement.
